Semi-Cured Brick Cheese from Alaior, Menorca is made with raw cow's milk using traditional methods. The paste is hand-pressed with a cotton cloth called a fogasser. During curing, the cheese is coated with oil and paprika, giving the rind a beautiful orange-brown color.
The semi-cured version matures for 90–120 days, while the fully cured variety reaches 180–240 days. This cheese offers an intense, slightly spicy flavor and aromas with long persistence on the palate, enhanced during maturation.
