The Eresma Iberian Shoulder is a premium cebo Ibérico shoulder produced in Segovia, Spain, by Grupo Alimentario Copese. Made from 50% Iberian breed pigs crossed with Duroc, this shoulder is cured for a minimum of 12 months to achieve an excellent balance between lean meat and infiltrated fat.
Its marbled texture provides a pleasant and long-lasting flavour, with a reddish-brown colour when sliced and a characteristic aroma of traditional air curing. The natural fat infiltration contains a high level of oleic acid, making this shoulder both tasty and nutritionally valuable.
Presented in a black cloth sack with hanging cord, this whole shoulder is ideal for daily consumption, family gatherings, and charcuterie boards. It is gluten-free and made following traditional Spanish curing methods.
