Don Cayo Semi-Cured Manchego Cheese is a premium Spanish cheese produced in La Mancha by Lacteas García Baquero S.A. Made from pasteurized Manchego sheep's milk, this cheese is carefully pressed and aged for 3–5 months to achieve its distinctive ivory-white to ivory-yellowish color, buttery texture, and slightly acidic, pleasant flavor.
This semi-cured Manchego is part of the Manchego Designation of Origin (DO), ensuring its authenticity and traditional production methods. The cheese is coated with a protective layer containing polyvinyl acetate with fatty acids and natural coloring agents (E-150a, E-160b(ii)) to preserve its quality during maturation.
