It is cured for over 32 months in the Guijuelo area of Salamanca, where the unique climate gives it a mild, slightly sweet flavor with fruity aromas.
The meat ranges from deep red to pinkish in color, while the fat, from white to translucent, has a smooth texture and an intense aroma, melting easily in the mouth.
