Sansueña Cured Sheep’s Cheese is an artisan Spanish cheese made from carefully selected raw sheep’s milk and produced by Lácteas Zamoro following traditional methods. The milk is thermized instead of pasteurized to preserve all its natural properties, resulting in a cheese with exceptional character and authenticity.
The production process begins with natural rennet coagulation and careful molding of the curd, followed by pressing to remove excess whey. The cheese is then placed in a brine bath and cured for 11 months in aging chambers, forming a natural rind without artificial ingredients. This long maturation gives the cheese a firm texture and a deep, complex flavor profile.
